The Sustainable Food Processing group in the Department of Health Science and Technology uses a combination of emerging food safety approaches, novel protein processing and sustainability assessment to target fundamental challenges in food science and society. Our research lies at the interface of biological systems and engineering.
We are looking for a candidate who is highly motivated to work on a project that aims on controlling bacterial spores with a mild and innovative germination-inactivation strategy. This strategy aims on first germinating bacterial spores in order to make them lose their extreme resistance. In a second step, the now susceptible germinated spores can then easily be inactivated with a mild inactivation step. High pressure will be the main target technology used to germinate bacterial spores. However, investigation of other technologies or combinations thereof are also of relevance. Of particular interest is the investigation of spore germination behaviour and mechanisms of spore superdormancy using advanced analytical technologies such as flow cytometry, fluorescence activated cell sorting and transmission electron microscopy. The overall vision is to develop scalable multihurdle technology concepts for more gentle food preservation at ambient conditions. Final applications for wanted microbial reduction will be evaluated.
The candidate should have excellent academic qualifications, good communication skills, and strong self-motivation. In addition, enthusiasm and talent to engage in microbiological and engineering questions and the underlying mechanisms are required. Basic skills in working with microorganisms are expected.
Experience in working with bacterial spores, food preservation principles and emerging sterilization technologies will be considered a plus.
Furthermore, the successful candidate must have a Masters degree (or equivalent) in Food Microbiology, Biotechnology, Food Technology, Food Engineering, Bioprocessing, Biology, or a closely related area. The position will be open until a suitable candidate is found.
